It’s so easy to make your own healthy yogurt that tastes better and is healthier than the commercial yogurts; and you can't do the SCD withour a legal source of probiotics. SCD 24-hr yogurt contains higher probiotics than you'll find in any suppliment. It aids in healing the intestines and maximizing digestion PLUS it is free of additives (sugars, gums, preservatives that feed the unhealthy bacteria).
Yogurt is actually composed of coagulated particles called curds which are suspended in a watery liquid called whey. As the whey is drained off in the strainer, the remaining curds become a thick cheese-like spread.
This yogurt cheese makes delicious vegetable dips, salad dressings, sandwich spreads, and even cheesecakes. Spread it on almond flour toast, muffins or almond flour coffee cakes. Serve yogurt cheese plain, flavored with herbs for veggie dips or with fruit, honey and/or legal vanilla for fruit dips or toppings. Many with dairy sensitivities can tolerate the dripped yogurt where they may not be able to tolerate other dairy products. Dripped yogurt is less tart and acidic than undripped. Those with sensitivities to dairy may need to start with only a tablespoon a day for several days and gradually build up to a cup per day.

Instructions for dripping the yogurt:
1. Clean 'cheese-maker' unit with soap just before each use.
2. Place the strainer in its plastic container and add up to 3 cups (750ml) of 24-hr yogurt to the strainer. Three cups of SCD yogurt = 1 cup (250ml) of yogurt cheese.
3. Cover and refrigerate unit for at least 2 hours. Yogurt will continue to thicken for up to 24 hours.
4. When yogurt has reached the desired thickness, drain off whey. Remove yogurt from strainer and transfer to an airtight container. Refrigerate up to two weeks.
